In a large bowl, mix together vital wheat gluten, nutritional yeast, ground flaxseed, garlic powder, onion powder, smoked paprika, fennel seeds, dried thyme, and black pepper.

In a separate bowl, whisk together vegetable broth, tamari or soy sauce, maple syrup, liquid smoke, and olive oil.

Pour the wet ingredients into the dry ingredients and stir until well combined.

Knead the mixture for about 5 minutes until it becomes elastic.

Divide the mixture into 4 equal portions and shape each portion into a sausage shape.

Preheat the oven to 350°F (175°C).

Heat a skillet over medium heat and add a small amount of oil.

Pan-fry the sausages for about 5 minutes, turning occasionally, until browned.

Transfer the sausages to a baking sheet and bake in the preheated oven for 15 minutes.
