Boil the potatoes until tender. Drain and mash.

In a blender, blend the cashews, lemon juice, salt, and pepper until smooth.

Mix the mashed potatoes, kale mixture, and cashew cream in a bowl.

Form the mixture into croquettes and coat them in rice flour and breadcrumbs.

Heat vegetable oil in a frying pan and fry the croquettes until golden brown.
