  1. Preheat the oven to 375°F (190°C).
  2. Cook the ziti pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large pan, heat olive oil over medium heat. Add diced onion and minced garlic cloves. Sauté until the onion becomes translucent.
  4. Add crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper to the pan. Stir well and let it simmer for 10 minutes.
  5. In a blender, combine cashews, nutritional yeast, lemon juice, and 1/4 cup of water. Blend until smooth and creamy.
  6. Add the cashew cream to the tomato sauce and mix well.
  7. In a baking dish, spread a layer of the tomato sauce at the bottom. Add a layer of cooked ziti pasta on top. Repeat the layers until all the ingredients are used.
  8. Sprinkle fresh basil leaves and vegan mozzarella cheese on the final layer.
  9. Cover the baking dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
