Heat oil in a large pot. Add onion, garlic, and ginger. Cook until onion becomes translucent.

Add turmeric powder, carrot, and potato. Stir well.

Pour vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.

Add coconut milk, lime juice, salt, and black pepper. Stir well and simmer for another 5 minutes.

Remove from heat and garnish with cilantro.
