Cook the rice noodles according to the package instructions. Drain and rinse with cold water.

Julienne the carrots, cucumber, and red bell pepper. Slice the spring onions and chop the fresh coriander.

In a small bowl, whisk together soy sauce, sesame oil, honey, lime juice, minced garlic, and chopped red chili.

In a large mixing bowl, combine the cooked rice noodles, julienned vegetables, chopped fresh coriander, and roasted peanuts.
