  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the rolled oats, almond flour, baking powder, salt, and cinnamon. In a separate bowl, mix together the coconut oil, maple syrup, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the dried cranberries, dark chocolate chips, and chopped almonds. Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper. Flatten each portion with the back of a spoon. Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
