Preheat the oven to 200°C (400°F).

Wash and scrub the potatoes, then cut them into wedges.

Place the potato wedges in a large bowl and drizzle with olive oil. Toss to coat evenly.

Add minced garlic, fresh herbs, salt, and black pepper to the bowl and toss again.

Arrange the seasoned potato wedges in a single layer on a baking sheet.

Slice the tomatoes and place them on top of the potatoes.

Bake in the preheated oven for 35-40 minutes, or until the potatoes are golden and crispy.
