Easy Black Beans and Rice (Vegetarian)
Black beans and rice is a staple dish in many Latin American countries and is often referred to as ‘Moros y Cristianos’ in Cuba.

Rinse the black beans and soak them overnight.

In a large pot, heat olive oil over medium heat.

Add chopped onion, garlic, and bell pepper. Sauté until softened.

Drain the soaked black beans and add them to the pot.

Stir in cumin powder, paprika, salt, and black pepper.

Add water and bring to a boil.

Reduce heat, cover, and simmer for about 25-30 minutes, or until the beans are tender.

While the beans are cooking, cook the rice according to package instructions.

Once the beans are cooked, serve them over rice.

Garnish with fresh cilantro, if desired.
