Peel and chop the potatoes, onion, garlic, carrots, bell pepper, and tomatoes.

In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the carrots, bell pepper, and tomatoes. Cook for a few minutes.

Add the potatoes, cumin, paprika, vegetable stock, salt, and black pepper. Bring to a boil.

Reduce heat and simmer for about 30 minutes or until the potatoes are tender.
