Drain and press the tofu to remove excess water.

Cut the tofu into cubes.

Heat vegetable oil in a pan and fry the tofu until golden brown. Set aside.

In the same pan, add garlic, ginger, and spring onion. Sauté until fragrant.

Add carrot top mushroom and stir-fry for 2 minutes.

Add soy sauce, sesame oil, salt, and pepper. Mix well.

Return the tofu to the pan and stir-fry for another 2 minutes.
