Rinse the brown rice under cold water.

In a large pot, sauté the onion, red bell pepper, carrot, and garlic cloves until softened.

Add the brown rice, black beans, vegetable broth, cumin, paprika, salt, and black pepper to the pot. Stir well.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and stir in fresh cilantro and lime juice.

Serve with sliced avocado on top.
