In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add sliced bell peppers and cook for 5 minutes until slightly softened.

Stir in cumin powder, paprika, salt, and black pepper.

Add rinsed rice and vegetable broth, bring to a boil.

Reduce heat to low, cover the pan, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.
