In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Saute until onion becomes translucent.

Add sliced carrots and celery stalks. Cook for 5 minutes.

Stir in cumin powder, coriander powder, paprika, turmeric powder, salt, and black pepper. Cook for another minute.

Add chopped tomatoes, drained chickpeas, and freekeh. Stir well.

Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes.

Remove from heat and let it rest for 10 minutes.

Stir in fresh cilantro and lemon juice.
