  1. In a bowl, mix olive oil, lemon juice, minced garlic, cumin, paprika, turmeric, cayenne pepper, salt, and black pepper to make the marinade.
  2. Add seitan to the marinade and let it marinate for at least 30 minutes.
  3. Preheat the grill and cook the marinated seitan for about 10-15 minutes, turning occasionally.
  4. In a separate bowl, mix yogurt and tahini to make the sauce.
  5. Warm the pita bread in the oven or on a stovetop.
  6. Assemble the shawarma by spreading the yogurt-tahini sauce on the pita bread, adding grilled seitan, sliced tomatoes, cucumbers, red onions, and fresh parsley.
  7. Roll the pita bread tightly and serve. Enjoy!
