Drain and rinse the chickpeas. In a food processor, combine the chickpeas, carrot, red onion, garlic cloves, fresh parsley, ground cumin, ground coriander, oats, salt, and black pepper. Pulse until well combined but still slightly chunky.

Shape the mixture into 4 patties. Place the patties on a baking sheet lined with parchment paper and refrigerate for 10 minutes.

Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side, until golden brown and crispy.

Toast the burger buns. Place lettuce leaves, tomato slices, red onion slices, and pickles on the bottom half of each bun. Top with a veggie burger patty and cover with the top half of the bun.
