  1. Peel and chop the potatoes into small pieces.
  2. Finely chop the onion and garlic.
  3. In a large pot, heat the olive oil and sauté the onion and garlic until golden.
  4. Add the chopped potatoes and vegetable broth to the pot.
  5. Bring the mixture to a boil and then reduce the heat to simmer for about 20 minutes, or until the potatoes are tender.
  6. While the soup is simmering, remove the stems from the kale and chop the leaves into thin strips.
  7. Add the kale to the pot and cook for an additional 5 minutes.
  8. Season with salt and black pepper.
