Cut the sweet potatoes into thin fries.

In a large bowl, toss the sweet potato fries with olive oil, salt, paprika, and garlic powder until evenly coated.

Arrange the fries in a single layer on a baking sheet.

Bake for 20-25 minutes, flipping halfway through, until the fries are crispy and golden brown.

While the fries are baking, prepare the dips by mixing sour cream and mayonnaise in one bowl, and ketchup in another bowl.

Remove the fries from the oven and let them rest for 5 minutes.
