  1. Preheat the oven to 375°F (190°C).
  2. Wash and peel the sweet potatoes, then cut them into chunks.
  3. In a large pot, boil the sweet potatoes until they are tender.
  4. Drain the sweet potatoes and transfer them to a large mixing bowl.
  5. Mash the sweet potatoes until smooth.
  6. Add the coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, salt, and vegan butter to the bowl. Mix well.
  7. Transfer the mixture to a baking dish and smooth the top.
  8. Bake in the preheated oven for 30 minutes.
  9. Remove from the oven and sprinkle the pecans and marshmallows on top.
  10. Return to the oven and bake for another 15-20 minutes, or until the marshmallows are golden brown.
  11. Remove from the oven and let it rest for 30 minutes before serving.
