  2. In a mixing bowl, combine the pumpkin puree, quinoa flour, almond flour, coconut sugar, coconut oil, vanilla extract, cinnamon, baking powder, and salt. Mix well until all ingredients are fully combined.
  3. Fold in the dark chocolate chips.
  4. Using a cookie scoop or spoon, drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  5. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 12-15 minutes, or until the edges are golden brown.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
