  1. Preheat the oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes.
  3. Toss the sweet potatoes with 1 tablespoon of olive oil, cumin, salt, and pepper.
  4. Spread the sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
  5. In a large bowl, combine the black beans, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and remaining olive oil.
  6. Add the roasted sweet potatoes to the bowl and gently toss to combine.
