Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until golden brown.

Add the tomatoes, cinnamon stick, ground cinnamon, ground turmeric, salt, and black pepper. Cook for 5 minutes, until the tomatoes are soft.

Drain the soaked rice and add it to the pot. Stir well to coat the rice with the tomato mixture.

Add the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, until the rice is cooked and the liquid is absorbed.

Remove the pot from the heat and let it rest, covered, for 10 minutes.

Fluff the rice with a fork and garnish with fresh parsley before serving.
