  1. Peel and chop the sweet potatoes into bite-sized cubes.
  2. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  3. Add the minced garlic, grated ginger, ground cumin, ground cinnamon, and ground coriander. Cook for another minute.
  4. Add the sweet potatoes to the pot and stir to coat them with the spices.
  5. Pour in the vegetable broth and pomegranate juice. Season with salt and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 45 minutes, or until the sweet potatoes are tender.
  7. Remove the lid and cook for an additional 10 minutes to allow the sauce to thicken.
  8. Serve the tagine hot, garnished with pomegranate seeds and fresh cilantro.
