Sweet Potato and Ginger Salad
Sweet potatoes are not actually potatoes, but rather root vegetables belonging to the morning glory family.

Preheat the oven to 400°F (200°C).

Peel and cut the sweet potatoes into bite-sized cubes.

In a mixing bowl, combine the olive oil, lemon juice, honey, ginger, salt, and black pepper.

Add the sweet potato cubes to the bowl and toss until well coated.

Spread the sweet potatoes onto a baking sheet and roast in the preheated oven for 20 minutes or until tender.

Remove from the oven and let them rest for 10 minutes.

Sprinkle with fresh parsley before serving.
