  1. Cook the noodles according to the package instructions. Drain and set aside.

  3. Add the mixed vegetables and cook for a few minutes until they start to soften.
  4. Stir in the Madras curry paste and cook for another minute.
  5. Pour in the coconut milk and soy sauce, and bring to a simmer.
  6. Add the cooked noodles to the pan and toss to coat them in the curry sauce.
  7. Cook for a few more minutes until everything is heated through.
  8. Remove from heat and stir in the lime juice and salt.
  9. Serve the Madras Curry Noodles garnished with cilantro.
