  1. Wash and chop the rainbow chard into bite-sized pieces. Set aside.
  2. Slice the bell pepper, carrot, onion, and garlic.
  3. In a small bowl, mix together tomato ketchup, rice vinegar, soy sauce, brown sugar, cornstarch, and water. Set aside.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat.
  5. Add the sliced onion and garlic to the skillet and sauté until fragrant.
  6. Add the bell pepper and carrot to the skillet and cook until slightly tender.
  7. Stir in the rainbow chard and pineapple chunks.
  8. Pour the sauce mixture over the vegetables and stir well.
  9. Cook for a few more minutes until the sauce thickens.
  10. Season with salt and black pepper to taste.
  11. Remove from heat and let it rest for 5 minutes.
