Cook the rice noodles according to package instructions. Drain and set aside.

In a large pan, heat the sesame oil over medium heat. Add minced garlic, ginger, and red chili flakes. Sauté for a minute.

Add the sliced bell pepper, carrot, and zucchini to the pan. Stir-fry for 3-4 minutes until the vegetables are slightly tender.

Squeeze the juice of one lemon over the vegetables. Add soy sauce and salt. Stir well.

Add the cooked rice noodles to the pan. Toss everything together until well combined.

Remove from heat and garnish with fresh basil leaves.

Let the dish rest for 5 minutes before serving.
