Falafel sandwich
Falafel is believed to have originated in Egypt and has been a popular street food in the Middle East for centuries.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Drain and rinse the chickpeas.

In a food processor, combine the chickpeas, onion, garlic, parsley, coriander, cumin, ground coriander, baking powder, all-purpose flour, salt, and black pepper. Process until well combined.

Shape the mixture into small patties.

Heat vegetable oil in a frying pan over medium heat.

Fry the falafel patties for 3-4 minutes on each side, until golden brown.

Remove falafel from the pan and place on paper towels to drain excess oil.

Cut the pita bread in half and warm it up in a toaster or oven.

Stuff the pita halves with falafel, fresh salad vegetables, and drizzle with tahini sauce.
