In a large mixing bowl, combine the peanut butter and powdered sugar. Mix well.

In a small microwave-safe bowl, melt the chocolate chips and coconut oil in the microwave.

Add the melted chocolate mixture and vanilla extract to the peanut butter mixture. Stir until well combined.

Place the mixture in the refrigerator for 30 minutes to firm up.

Once firm, use a small scoop or tablespoon to portion out the mixture and roll into balls.

Sprinkle the sea salt on top of each truffle.

Place the truffles on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to set.
