Summer Bean Soup
Green beans are a great source of vitamins A and C, as well as fiber. They are also low in calories and fat.

Bring a pot of water to boil. Add the green beans and kidney beans. Cook for 8-10 minutes until tender. Drain and set aside.

In a large bowl, combine the cherry tomatoes, red onion, cucumber, and fresh basil leaves.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Add the cooked beans to the large bowl of vegetables. Pour the dressing over the mixture and toss gently to combine.

Let the salad rest for 5 minutes to allow the flavors to meld together.
