Sugar Free Peanut Balls
Peanuts are not actually nuts, but legumes!
This is vegan, gluten free and low carb recipe. Dish can be prepared in 45 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 8.

In a mixing bowl, combine peanut butter, honey, rolled oats, chia seeds, vanilla extract, and a pinch of salt. Mix well.

Form the mixture into small balls using your hands.

Roll the peanut balls in unsweetened shredded coconut to coat.

Place the peanut balls on a baking sheet lined with parchment paper.

Refrigerate the peanut balls for at least 30 minutes to set.

Meanwhile, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.

Drizzle the melted chocolate over the chilled peanut balls.

Return the peanut balls to the refrigerator for another 10 minutes to allow the chocolate to set.
