  2. Split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the bean to the saucepan.
  3. In a small bowl, mix cornstarch with 2 tablespoons of water until smooth.
  4. Add the cornstarch mixture and salt to the saucepan and whisk well.
  5. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon.
  6. Remove the vanilla bean from the mixture.
  7. Allow the mixture to cool to room temperature.
  8. Once cooled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.
  9. Transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until firm.
