  1. Press and drain tofu, then cut into cubes.
  2. Slice shiitake mushrooms.
  3. In a small bowl, mix black bean sauce, soy sauce, minced garlic, grated ginger, and chopped red chili.
  4. Heat vegetable oil in a wok or large skillet over high heat.
  5. Add tofu cubes and stir-fry until golden brown.
  6. Add shiitake mushrooms and continue stir-frying for 2-3 minutes.
  7. Pour in the black bean sauce mixture and stir-fry for another minute.
  8. In a separate bowl, mix cornstarch and water to make a slurry.
  9. Add the slurry to the wok and stir until the sauce thickens.
  10. Season with salt and garnish with chopped green onions.
  11. Serve hot with steamed rice.
