Stir-Fried Cellophane Noodles
Cellophane noodles, also known as glass noodles or bean thread noodles, are made from mung bean starch and are transparent when cooked.
This is vegan and quick meals recipe. Dish can be prepared in 25 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Soak the cellophane noodles in hot water for 5 minutes or until softened. Drain and set aside.

In a wok or large skillet, heat vegetable oil over medium-high heat. Add garlic and ginger, and stir-fry for 1 minute.

Add carrots, bell peppers, snow peas, and mushrooms. Stir-fry for 3-4 minutes or until vegetables are tender-crisp.

Push the vegetables to one side of the wok and add the drained cellophane noodles. Stir-fry for 2 minutes.

Add soy sauce, sesame oil, salt, and black pepper. Stir-fry for another 2 minutes or until the noodles are heated through.

Garnish with sliced green onions and cilantro.
