Moroccan Chickpea Soup, also known as Harira, is a traditional Moroccan soup often served during Ramadan to break the fast.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves, sauté until fragrant and translucent.

Add chopped carrots, diced tomatoes, ground cumin, ground coriander, ground turmeric, paprika, and cayenne pepper. Stir well.

Add chickpeas and vegetable broth. Bring to a boil, then reduce heat and let it simmer for 20 minutes.

Using an immersion blender or a regular blender, blend the soup until smooth.

Stir in lemon juice, fresh cilantro, salt, and black pepper. Simmer for an additional 5 minutes.

Remove from heat and let it rest for 5 minutes.

Serve hot and garnish with additional cilantro leaves if desired.
