  1. Rinse the split peas and set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, celery, and garlic. Cook until vegetables are softened.
  3. Add split peas, vegetable broth, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for about 1 hour or until split peas are tender.
  4. Remove bay leaf and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a blender or food processor in batches.
  5. If the soup is too thick, add water to reach your desired consistency.
  6. Serve hot and enjoy!
