  2. In a pan, heat olive oil and sauté the chopped onion and minced garlic until translucent.
  3. Add the spinach to the pan and cook until wilted. Remove from heat and let it cool.
  4. Once the spinach mixture is cooled, add it to the mashed kidney beans in the bowl.
  5. Add bread crumbs, ground cumin, ground coriander, salt, pepper, and beaten egg to the bowl.
  6. Mix all the ingredients well until combined.
  7. Shape the mixture into patties and place them on a plate.
  8. Heat a frying pan or grill over medium heat and add a little oil.
  9. Cook the patties for about 4-5 minutes on each side, or until crispy.
  10. Toast the burger buns and assemble the burgers with lettuce, tomato, red onion, and any desired toppings.
  11. Serve the spinach bean burgers with a side of fries or salad.
