  1. In a large pot, bring the vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the bell pepper, zucchini, carrot, chickpeas, and tomatoes to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Stir in the cumin, paprika, cayenne pepper, salt, and black pepper. Cook for another 2 minutes.
  5. Fluff the couscous with a fork and transfer it to the skillet. Mix well to combine all the ingredients.
  6. Cook for an additional 5 minutes, allowing the flavors to blend together.
  7. Remove from heat and stir in the fresh parsley and lemon juice.
  8. Serve hot and enjoy!
