  1. Preheat the oven to 350°F (180°C).
  2. Rinse the quinoa under cold water and cook according to package instructions.
  3. In a large bowl, mix together the cooked quinoa, shredded coconut, almond flour, coconut oil, maple syrup, vanilla extract, baking powder, and salt.
  4. Stir in the dark chocolate chips.
  5. Line a baking sheet with parchment paper.
  6. Form the dough into small balls and place them on the baking sheet.
  7. Flatten each ball with the back of a spoon.
  8. Bake for 15 minutes or until golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 10 minutes.
  10. Transfer to a wire rack to cool completely.
