Preheat the oven to 350°F (180°C).

Rinse the quinoa under cold water and cook according to package instructions.

In a large bowl, mix together the cooked quinoa, shredded coconut, almond flour, coconut oil, maple syrup, vanilla extract, baking powder, and salt.

Stir in the dark chocolate chips.

Line a baking sheet with parchment paper.

Form the dough into small balls and place them on the baking sheet.

Flatten each ball with the back of a spoon.

Bake for 15 minutes or until golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 10 minutes.

Transfer to a wire rack to cool completely.
