  1. Soak tapioca pearls in water for 4-5 hours. Drain and keep aside.
  2. Boil the potato, peel, and mash it.
  3. In a mixing bowl, add soaked tapioca pearls, mashed potato, chopped onion, chopped green chili, grated ginger, chopped curry leaves, chopped cilantro, rice flour, chickpea flour, red chili powder, turmeric powder, salt, and water. Mix well to form a thick batter.
  4. Heat oil in a deep frying pan.
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy.
  6. Remove the fritters from the oil and drain on a paper towel.
  7. Serve hot with chutney or sauce of your choice.
