Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

In a large bowl, whisk together the gluten-free flour, baking powder, cinnamon, ground ginger, and salt.

In a separate bowl, mash the red papaya until smooth. Add the coconut oil, maple syrup, vanilla extract, and almond milk. Stir well.

Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 10 minutes. Then transfer to a wire rack to cool completely.
