Konyaku, also known as konjac, is a traditional Japanese ingredient made from the root of the konjac plant. It is low in calories and high in fiber, making it a healthy addition to this stir-fry dish.

Rinse the konyaku under cold water and cut it into bite-sized pieces.

Heat olive oil in a large pan over medium heat.

Add onion, bell pepper, garlic, and ginger to the pan and sauté for 3-4 minutes.

Add konyaku to the pan and cook for another 3-4 minutes.

Add cumin powder, coriander powder, cayenne pepper, paprika, salt, and black pepper to the pan. Stir well to coat the konyaku and vegetables with the spices.

Add canned white beans to the pan and cook for 2-3 minutes.

Drizzle lemon juice over the stir-fry and toss to combine.

Remove from heat and let it rest for 5 minutes.

Garnish with fresh cilantro before serving.
