  2. Add red bell pepper, carrots, and sweet potato. Cook for 5 minutes.
  3. Add vegetable broth, peanut butter, crushed tomatoes, cumin, paprika, cayenne pepper, salt, and black pepper. Stir well.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove from heat and let it rest for 5 minutes.
  6. Use an immersion blender to blend the soup until smooth.
  7. Return the pot to low heat and stir in coconut milk. Cook for an additional 5 minutes.
  8. Serve hot, garnished with fresh cilantro and crushed roasted peanuts.
