  1. Rinse the red lentils and set aside.
  2. In a large pot, heat some oil over medium heat.
  3. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  4. Add the curry powder, turmeric powder, cumin powder, and coriander powder. Stir well to coat the onions and spices.
  5. Add the rinsed red lentils and stir to combine with the spices.
  6. Pour in the canned tomatoes and coconut milk. Stir well.
  7. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 25-30 minutes, or until the lentils are tender.
  8. Stir in the lemon juice and salt.
  9. Remove from heat and let it rest for about 5 minutes.
  10. Serve hot, garnished with fresh cilantro.
