  5. Add the lentils and water, and bring to a boil.
  6. Reduce heat, cover, and simmer for about 25-30 minutes, or until the lentils are tender.
  7. Stir in the fresh cilantro and lemon juice.
  8. Let the lentils rest for 5 minutes before serving.
  9. Serve hot with rice or bread.
