  1. Preheat the oven to 200°C (400°F).
  2. Peel and chop the butternut squash into small cubes.
  3. Place the butternut squash cubes on a baking tray, drizzle with olive oil, sprinkle with cumin, coriander, cinnamon, salt, and black pepper. Toss to coat evenly.
  4. Roast in the oven for 25-30 minutes, or until the squash is tender and slightly caramelized.
  5. Meanwhile, chop the onion, garlic, and carrot.
  6. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until fragrant.
  7. Add the carrot and sauté for another 5 minutes.
  8. Add the roasted butternut squash to the pot, along with vegetable stock. Bring to a boil, then reduce heat and simmer for 10 minutes.
  9. In a separate pot, cook the couscous according to package instructions.
  10. Serve the spiced butternut squash stew over a bed of couscous. Garnish with fresh parsley. Enjoy!
