Spaghetti Squash
Spaghetti squash is named for its unique flesh, which separates into long, thin strands resembling spaghetti noodles when cooked.

Preheat the oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds.

Brush the cut sides of the squash with olive oil and sprinkle with salt and black pepper.

Place the squash halves cut side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender.

Remove the squash from the oven and let it rest for 5 minutes.

Use a fork to scrape the flesh of the squash into spaghetti-like strands.

In a skillet, heat olive oil over medium heat and add minced garlic. Cook for 1-2 minutes until fragrant.

Add the spaghetti squash strands to the skillet and toss to coat with the garlic oil.

Cook for an additional 2-3 minutes until heated through.

Serve the spaghetti squash topped with grated Parmesan cheese and fresh basil leaves.
