  3. Brush the cut sides of the squash with olive oil and sprinkle with salt and black pepper.
  4. Place the squash halves cut side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender.
  5. Remove the squash from the oven and let it rest for 5 minutes.
  6. Use a fork to scrape the flesh of the squash into spaghetti-like strands.
  7. In a skillet, heat olive oil over medium heat and add minced garlic. Cook for 1-2 minutes until fragrant.
  8. Add the spaghetti squash strands to the skillet and toss to coat with the garlic oil.
  9. Cook for an additional 2-3 minutes until heated through.
