Spaghetti Squash
Spaghetti squash gets its name from the fact that its flesh, when cooked, can be scraped into long, thin strands resembling spaghetti.
This is vegan and gluten free recipe. Dish can be prepared in 65 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 7.

Preheat the oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and remove the seeds.

Drizzle olive oil over the cut sides of the squash and season with salt and black pepper.

Place the squash halves cut side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender.

Remove the squash from the oven and let it rest for 5 minutes.

Use a fork to scrape the flesh of the squash into spaghetti-like strands.

In a pan, heat olive oil and garlic over medium heat until fragrant.

Add the spaghetti squash strands to the pan and toss to coat them in the garlic oil.

Cook for 2-3 minutes, or until heated through.

Serve the spaghetti squash with grated Parmesan cheese and fresh basil on top.
