Colombian Lentils
Lentils are a staple in Colombian cuisine and are often enjoyed with rice and meat as part of a traditional meal.

Rinse the lentils under cold water.

In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the carrots, potatoes, tomatoes, cumin, paprika, and bay leaf. Cook for a few minutes.

Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 40 minutes or until the lentils are tender.

Season with salt and pepper.

Serve hot, garnished with cilantro and a squeeze of lime juice.
