Southwestern Sweet Potatoes and Black Beans

Preheat the oven to 400°F (200°C).

Wash and scrub the sweet potatoes, then cut them into cubes.

In a large bowl, toss the sweet potato cubes with olive oil, cumin, chili powder, salt, and black pepper.

Spread the seasoned sweet potatoes onto a baking sheet and roast in the preheated oven for 25 minutes, or until they are tender and slightly crispy.

While the sweet potatoes are roasting, heat olive oil in a skillet over medium heat.

Add the diced red bell pepper, red onion, and minced garlic to the skillet. Sauté until the vegetables are softened.

Rinse and drain the black beans, then add them to the skillet with the sautéed vegetables. Stir well to combine.

Remove the roasted sweet potatoes from the oven and add them to the skillet.

Squeeze fresh lime juice over the mixture and stir to combine.

Cook for an additional 5 minutes, allowing the flavors to meld together.
