Rinse the pinto beans and soak them overnight.

In a large pot, add the soaked beans, onion, garlic cloves, smoked ham hock, salt, black pepper, bay leaf, and water.

Bring the pot to a boil, then reduce the heat to low and simmer for about 2 hours or until the beans are tender.

Remove the ham hock and shred the meat, discarding the bone and fat.

Return the shredded meat to the pot and simmer for an additional 10 minutes.
